Our Chef
Ivan Zanfino, originally from Acri in Calabria, is the chef at our restaurant. His love for cooking began in the family kitchen with his mother and grandmother, both excellent cooks. He graduated from the Cosenza catering college, then worked in a number of locations before obtaining a Master’s in Haute Cuisine from the renowned Alajmo brothers’ school in Vicenza. He then went on to hone his cooking skills through further study and working alongside big-name chefs. After a prestigious apprenticeship in 2014 at the three-Michelin-star ‘Da Vittorio’ restaurant outside Bergamo, owned by the Cerea family, the following year he was hired as Sous Chef at the Amistà restaurant in the Art Hotel Byblos 5L near Verona. In 2017, he moved to the Verona city centre to work as Executive Chef in equally prestigious hotels. In 2023, he came to Custoza to join the Caceffo family and take part in their mission. In love with the landscape around him, Chef Zanfino creates menus that evolve along with the changing seasons and cater for every taste and special dietary needs. His cooking style takes the classics and reinterprets them with the help of technology, and he daily shows his love for food through constant study and experimentation.
